- 2 chopped-up tomatoes
- 2 chopped slices of red onions
- 12 to 15 sprigs of finely chopped cilantro
- juice of 1 lime
- 1-2 tablespoons of olive oil
- salt, fresh pepper, red pepper flakes or any piece of finely minced hot pepper
Mix all ingredients and let stand.
Serve as a side or top off your dish (also great on Doc’s Omelet!)
