- 3 to 4 fresh garlic cloves, smashed and chopped
- Extra virgin olive oil
- 1/2 red onion, sliced
- Watercress – 2 bunches
- 1/2 fresh lemon
- Salt and pepper
- Red pepper flakes
Smash the whole garlic cloves with the side of a large knife or cleaver and chop a bit.
Sauté the garlic in a little olive oil for a few minutes, until it just begins to brown.
Add the onion and continue to sauté.
Season with salt, pepper and red pepper flakes to taste.
Add the watercress and continue to sauté over hot flame.
When greens are cooked, squeeze lemon over all and serve.
