Doc’s Eggplant With Pearl Onions & Maitake Mushrooms


  • 6 cloves garlic, smashed and minced
  • Extra Virgin Olive Oil
  • 5 medium Chinese eggplant, cut in bite size pieces
  • Container of Peeled Red Pearl onions, cut in half (mild, sweet, small onions)
  • 7 fresh basil leaves, chopped
  • 1 package Maitake (Hen of the Woods) mushrooms (I got them at Foodtown), cut up
  • Salt, pepper, red pepper flakes


Sauté garlic in oil

Add eggplant and onions, basil, salt, pepper and red pepper

Sauté covered at medium high to high heat until eggplant is soft, 7-10 minutes

Add mushrooms and cook uncovered another 3-5 minutes

Garnish with additional chopped basil

I served this with grilled salmon.
