Ingredients
- 1 head of cauliflower
- Extra virgin olive oil
- 1 small onion or several scallions, finely chopped or lightly pureed
- 2 large fresh garlic cloves, chopped
- Salt, pepper and red pepper flakes
- Wasabi powder, optional, to taste (available at Asian markets)
Directions
Steam or lightly boil head of cauliflower, until you can easily mash it with a large fork.
Sauté garlic in olive oil.
Add onion and continue to sauté.
Add salt, pepper and sprinkle of red pepper flakes, to taste.
When garlic turns golden, take off heat.
Once temperature allows, carefully mash in cauliflower.
Gingerly add additional olive oil, salt and pepper to taste.
If making the wasabi version, add powder at this time, tasting as you go.
