Doc’s Cucumber Salad


  • Cucumber, pealed and cut
  • Fresh red bell pepper, diced
  • Fresh yellow pepper, diced
  • Slice of red onion, diced
  • Salt and pepper
  • Red pepper flakes to taste
  • Basil or other herbs to your taste
  • CMMD Ultra Premium Olive Oil
  • Vinegar: I use white vinegar PLUS a DASH of wine vinegar and a DASH of Champagne vinegar

Quantities are up to you. Make a lot or make a little. Use more of what you like best.


Combine all ingredients, toss and enjoy!

Save leftovers for another meal’s side dish or a snack
