Southwestern Salad



  • 4 cups torn salad greens
  • ¼  cucumber 
  • ¼ cup diced red sweet pepper
  • ¼ cup thinly sliced onion
  • 1 tsp lime juice
  • 1 tsp fresh cilantro


For the salad, combine the greens, cucumber, red sweet pepper, onion, lime juice and fresh cilantro, and toss. Place the salad on a plate or in a bowl. 

For the dressing, combine the greek yogurt and the other ingredients and serve on the side. 

Exchange: 2 VLP +  ½ Vegetable
