Doc’s Chicken and Kale

This recipe is given per boneless, skinless chicken breast. Follow your protein and vegetable amounts, and make a little, make a lot, share or save for later.


  • Boneless, skinless chicken breast
  • 1 – 2 cloves garlic, minced
  • Extra virgin olive oil
  • Crushed red pepper flakes
  • 1/4 bag pre-cut Kale
  • 1/2 cup chicken broth, low-fat
  • 1 Tbsp. Parmesan cheese


Sauté garlic in olive oil

Add a little crushed red pepper flakes

Chop chicken breast into 1 inch cubes

When garlic is starting to brown, add chicken breast and sear about 1 minute on each side

Add chopped kale

Add salt and pepper to taste

Pour in chicken broth



Cook until chicken is cooked through, about 5 – 7 minutes

Top with 1 tablespoon Parmesan cheese per serving
