- Croutons per Doc’s recipe (use ½ loaf of our Paleo bread, which is 8 slices) for gluten free option OR CarbquikTM drop biscuits (use recipe on side of box) which are 4 days old, cut into cubes, for option containing gluten
- 3-4 onions
- 2 cloves garlic
- 2-3 ribs celery
- 1 green pepper
- 4 oz mushrooms
- Fresh herbs of your choice (I use rosemary, oregano and basil)
- Salt and pepper to taste
- Extra virgin olive oil
- 2 cups Vegetable or chicken broth
Prepare the croutons per the recipe, or use cubed biscuits.
Cut and sauté the onions, garlic, celery & pepper in oil until soft.
Add the fresh herbs, salt and pepper.
Add the vegetable or chicken stock and simmer for 5 minutes.
Add the croutons or biscuit cubes and mix well. If it’s too dry, add more broth.
Place stuffing mixture in baking dish prepared with non-stick spray.
Bake at 350 degrees 30 minutes or until hot.
