Low Carb Recipes – Doc’s Stuffing

Low Carb Stuffing Recipes – Gluten Free and Non-Gluten Free

You CAN enjoy stuffing while losing weight!  The delicious gluten free recipe is made with our Paleo Coconut or our Paleo Almond bread, and the recipe with gluten is made from CarbquikTM, all of which are available from our online store or at the office. Whether you just crave a traditional comfort food, or are preparing for a holiday feast, our low carb recipes are designed to help you lose weight, or help you keep the weight off – without denying yourself the best in life! Our healthy recipes provide great alternatives for your favorites!

Ingredients

  • Croutons per Doc’s recipe (use ½ loaf of our Paleo bread, which is 8 slices) for gluten free option OR CarbquikTM drop biscuits (use recipe on side of box) which are 4 days old, cut into cubes, for option containing gluten
  • 3-4 onions
  • 2 cloves garlic
  • 2-3 ribs celery
  • 1 green pepper
  • 4 oz mushrooms
  • Fresh herbs of your choice (I use rosemary, oregano and basil)
  • Salt and pepper to taste
  • Extra virgin olive oil
  • 2 cups Vegetable or chicken broth

Directions

Prepare the croutons per the recipe, or use cubed biscuits.

Cut and sauté the onions, garlic, celery & pepper in oil until soft.

Add the fresh herbs, salt and pepper.

Add the vegetable or chicken stock and simmer for 5 minutes.

Add the croutons or biscuit cubes and mix well. If it’s too dry, add more broth.

Place stuffing mixture in baking dish prepared with non-stick spray.

Bake at 350 degrees 30 minutes or until hot.
