Healthy and Easy Fried Rice Recipe
Try Doc’s easy fried rice recipe and feel good about your meal! You don’t need to sacrifice taste to enjoy the dishes you love. With simple substitutions and fresh vegetables, this easy fried rice will become a fan favorite!
Ingredients
- Extra virgin olive oil (Doc likes to add a bit of sesame oil for this recipe)
- ¼ cup scallions, diced small – Save the green ends for garnish
- ½ cup red and orange bell peppers, diced small
- 2 cloves garlic, minced
- 2 mushrooms, sliced
- 2 eggs
- 2 packages Shirataki rice, available in our pantry at CardioMender, MD
- Soy sauce
- Salt & Pepper
- Hot sauce optional
Directions
Prepare the Shirataki Rice per package directions, meaning rinse and either par boil or microwave.
Sauté garlic in olive oil for about 2 minutes, until just turning brown.
Add peppers and scallions (not greens of scallion) and continue to sauté for 2-3 minutes.
Add mushrooms and cook for another few minutes.
Move veggies to side of pan and add 2 raw eggs on cleared side.
Scramble the eggs , and once set, mix everything together.
Add the Shirataki rice, salt and pepper.
Add the soy sauce.
Garnish with the cut up green ends of the scallions and enjoy this easy fried rice recipe!
