Healthy Breakfast! Doc’s Herb Omelet


  • PAM spray
  • 2 eggs or 4 egg whites (to make it really quick & easy, I get packaged egg whites)
  • Salt
  • Freshly ground pepper
  • Fresh herbs, such as dill and chives (my favorites), or your favorite herbs
  • Optional: Cayenne pepper flakes or hot sauce, as you like; low fat cheese; Canadian bacon


Spray a microwavable soup bowl with PAM.

Add the mixed eggs and egg whites.

Add the salt, pepper and fresh herbs (and hot spice if you wish).

Microwave for 1 1/2 to 2 minutes.

Add the cheese and/or Canadian bacon and microwave an additional 30 seconds to 1 minute.

Slide the omelet out onto a plate and enjoy your healthy breakfast!
