Doc’s Baked Apples

Doc’s Baked Apples – a Healthy and Simple Recipe

My October trip to the Finger Lakes in New York sparked me to create this simple and delicious dessert – Autumn inspired Baked Apples . I think it’s a great addition to our healthy weight loss recipes.

Ingredients

  • 4 medium Rome, Fuji or Delicious apples
  • 1 can diet black cherry OR diet cream soda
  • 4 oz. fat free cream cheese
  • Cinnamon for optional topping

Directions

Preheat oven to 375 degrees F.
Core apples and place them in a casserole dish or loaf pan.
Pour the entire can of soda over the apples.
Place dish in oven and bake for 45-55 minutes, or until the apples are tender.
Place 1 oz. of zero fat cream cheese in the center of each apple.
Sprinkle with cinnamon.
