Doc’s Seafood Salad
Ingredients:
- Method 1 – Simple Method:
- Packet of Italian seasoning mix
- Extra Virgin olive oil per packet directions
- You will NOT use vinegar per packet directions
- Method 2 – Doc’s Marinade, for those who like to take time in the kitchen:
- Extra Virgin olive oil, 3 Tablespoons per serving
- Fresh garlic, 1 clove finely chopped
- Scallion greens, 1 -2 Tablespoons, chopped
- Fresh herbs (I used rosemary & sage, cilantro would work great also)
- Salt and freshly ground black pepper to taste
- Red pepper flakes to taste
- Continuing for both methods:
- Frozen Seafood Medley – count as lean protein – I suggest 3-4 oz for lunch or 4-6 oz for dinner
- Juice of 1-2 lemons or limes
- Lettuce greens
Directions:
- Method 1 – Simple Method:
- Combine the Italian seasoning mix and olive oilx
- Let sit
- Method 2 – Doc’s Marinade:
- Combine olive oil, garlic, scallion greens and herbs
- Heat until garlic turns golden brown
- Remove from heat and you can let sit for flavors to combine
- Continuing for both methods:
- Boil seafood mixture 4 min (or per instructions or personal preference)
- Drain
- Squeeze on lemon or lime juice
- Mix and let sit for 5 minutes
- Add in oil-herb mixture and chill for 15- 60 minutes
- Serve over a bed of lettuce greens, garnished with a slice of lemon or lime & a few chopped scallion greens
